Chaparral Gardens is 20 acres of natural landscape along with a 2 acres organic farm. Our wonderful micro climate, in California Central Coast, allows us to grow a wide variety of fruits, herbs, and vegetables. Chaparral Gardens Artisan Vinegars start with hand selected, hand picked fruits, herbs, and vegetables grown on our organic farm. The fruits and herbs are placed in small vats along with an organic Kosher base vinegar. We add the "Mother" developed from the original batches. The infusion is then taken through a "mild" fermentation process that takes several months to complete. Two more secret steps are taken to ensure the flavors are locked in. Time and patience are the key to success. All work is done by hand, from pulling weeds to hand labeling. Our vinegars are great in salads,make a wonderful marinade or reduce them down to make glazes for your favorite dish. HOT FROM PRESS
